Heluva Cheesy Cheeseburger Pockets
Makes 8
INGREDIENTS:
  • 2 sheets frozen puffed pastry

  • 8 oz. 93% lean ground beef, cooked and drained

  • 1/2 medium onion, diced

  • 3/4 cup Heluva Good!® French Onion Dip, divided

  • 1 Tbsp. Dijon mustard

  • 4 1-oz. slices American cheese

  • 1 cup shredded cheddar cheese

  • 6 dill pickle rounds, diced

  • 1 egg yolk

  • 4 tsp. sesame seeds

DIRECTIONS:
 
Allow frozen puffed pastry to rest on the counter for 10 minutes. Unroll and place on a cutting board. Cut each sheet of puffed pastry into 9" x 3" rectangles.

Preheat oven to 400°F.

Add 1 tablespoon of oil to a medium skillet over medium heat. Add the onion and cook until caramelized, about 5 to 7 minutes. Remove onions from skillet and set aside.

Mix onions with cooked ground beef, 1/4 cup of Heluva Good! French Onion Dip, mustard, and pickles in a medium bowl.

Cover half the rectangles with American cheese, leaving a 1/2-inch rim of puff pastry on all sides. Spread 4 tablespoons of the beef mixture on top of the sliced cheese. Top the beef mixture with 2 tablespoons of cheddar cheese. To assemble the pockets, place the remaining rectangles of puff pastry on top of the filled rectangles. Seal the edges of the pockets securely using a fork to pinch the edges of the puff pastry together. 

Beat the egg yolk with a fork in a small bowl. Brush the top of each pocket with egg and sprinkle with 1/2 teaspoon sesame seeds. Make a few small pricks with a fork on the top of each pocket to allow steam to escape while baking.
